A topic that is close to me is mental health. Mental health stigma is a problem many of us have faced, the inability to talk comfortably about how we feel is all too common in the world in which we live.
When you walk into a kitchen you can ramp this up a whole load of notches. Kitchens are testosterone fuelled spaces where it seems to be a competition to work yourself to death. High pressue, long hours and constantly on your feet makes the work pretty gruelling.
Why do we do it? Because there’s nothing else like it.
A bunch of dropouts, criminals and addicts that always have your back. It’s a level playing field, where everyone works for the same goal… to make some food hot (and delicious).
I discovered The Burnt Chef Project on Instagram and was immediately intrigued as to what they do. Looking though their website, seeing that people think like I do, and speak out! I saw there was an opportunity to become an ambassador and didn’t hesitate in applying.
I have always been aware of stress and fluctuating mental health in myself, it’s a lonely place inside your own head. But reading other people’s journeys has been a real wake up for me and I am committed to creating safe, fair kitchens that aren’t intimidating and have no judgements and no stigma.

How to brine chicken. This easy method will make you cook like a chef
This method will enhance your chicken, pork or fish.try this once and you'll be hooked on adding different flavours through a brine.
You'll need
1 litre water
100g salt
2 tspn sugar
Any herbs, spices, flavourings you like.
Iused parsley, corriander, garlic and chilli. If you add no flavourings that's fine too, the brine will still do its thing and get your protien seasoned and tender. Any questions, let me know... and let me know how you get on!
